Ingredients:
For the Cake:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
3 large eggs
1 cup applesauce
1/2 cup buttermilk
1 teaspoon vanilla extract
1 cup raisins
For the Glaze:
1/2 cup brown sugar, packed
1/4 cup unsalted butter
1/4 cup heavy cream
1 teaspoon vanilla extract
Instructions:
1•Prepare the Cake:
Preheat the oven to 350°F (175°C).
Grease and flour a 9-inch springform pan.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the applesauce, buttermilk, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing just until combined.
Fold in the raisins.
Pour the batter into the prepared pan and smooth the top with a spatula.
2•Bake the Cake:
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
3•Prepare the Glaze:
In a small saucepan, combine the brown sugar, butter, and heavy cream.
Cook over medium heat, stirring constantly, until the mixture comes to a boil.
Boil for 1 minute, then remove from heat and stir in the vanilla extract.
Allow the glaze to cool slightly before pouring it over the cooled cake.
4•Serve:
Pour the warm glaze over the cooled cake, allowing it to drip down the sides.
Let the glaze set before slicing and serving.
