Ingredients:
4 large potatoes, peeled and diced
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
4 strips of bacon, cooked and crumbled
1/4 cup chopped fresh parsley
1/4 cup chopped chives
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup all-purpose flour
1 egg, beaten
Salt and pepper to taste
Oil for frying
Instructions:
1•Boil the Potatoes:
Place the diced potatoes in a large pot of salted water.
Bring to a boil and cook until the potatoes are tender, about 10-15 minutes.
Drain and mash the potatoes until smooth.
2•Mix Ingredients:
In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, crumbled bacon, parsley, chives, and minced garlic.
Mix until well combined.
Season with salt and pepper to taste.
3•Shape the Bites:
Take a small amount of the potato mixture and shape it into a ball (about the size of a golf ball).
Flatten it slightly to form a bite-sized patty.
Repeat with the remaining mixture.
4•Prepare for Frying:
Place the flour in a shallow dish.
Place the beaten egg in another shallow dish.
Place the breadcrumbs in a third shallow dish.
Dredge each potato bite first in the flour, then dip in the beaten egg, and finally coat with breadcrumbs.
5•Fry the Bites:
Heat oil in a large skillet over medium-high heat.
Fry the potato bites in batches until golden brown and crispy, about 2-3 minutes per side.
Transfer to a paper towel-lined plate to drain excess oil.
6•Serve:
Serve the cheesy potato bites warm, garnished with extra parsley and chives if desired.
