Ingredients:
For the Base:
1 1/2 cups graham cracker crumbs or crushed digestive biscuits
1/4 cup unsalted butter, melted
For the Caramel Layer:
1 cup granulated sugar
6 tbsp unsalted butter, room temperature, cut into pieces
1/2 cup heavy cream, room temperature
1 tsp vanilla extract
Pinch of salt
For the Mascarpone Layer:
1 cup heavy cream, chilled
1/2 cup powdered sugar
16 oz mascarpone cheese, room temperature
1 tsp vanilla extract
For the Coffee Soak:
1 cup strong brewed coffee, cooled
2 tbsp coffee liqueur (optional)
For the Topping:
1/4 cup unsweetened cocoa powder
Whipped cream
Fresh strawberries, for garnish
Instructions:
1•Prepare the Base:
Mix the graham cracker crumbs or crushed digestive biscuits with the melted butter until well combined.
Press the mixture into the bottom of a 9×9 inch baking dish to form an even layer. Refrigerate while you prepare the other layers.
2•Prepare the Caramel:
In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a golden amber color.
Carefully add the butter and stir until melted and combined.
Slowly pour in the heavy cream while stirring continuously (be careful as the mixture will bubble up).
Stir in the vanilla extract and a pinch of salt. Let the caramel cool slightly, then pour it over the chilled graham cracker base. Refrigerate until set.
3•Prepare the
Mascarpone Layer:
In a large mixing bowl, beat the heavy cream with the powdered sugar until soft peaks form.
In another bowl, mix the mascarpone cheese with the vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture until fully combined.
Spread the mascarpone mixture evenly over the caramel layer. Refrigerate while preparing the coffee soak.
4•Prepare the Coffee Soak:
Mix the cooled brewed coffee with the coffee liqueur (if using).
Lightly soak ladyfingers or sponge cake pieces in the coffee mixture and layer them over the mascarp
5•Final Assembly:
Sift the unsweetened cocoa powder over the top of the dessert.
Refrigerate for at least 4 hours or overnight to let the flavors meld together.
6•Serve:
Before serving, top with whipped cream and garnish with fresh strawberries.
