Fried Peach Pies
Ingredients:
• 8 ounces dried apples or peaches
• 1 cup water
• 1/3 cup sugar
• 1 tablespoon butter
• 1 tsp cinnamon or apple pie spice
• 1 can jumbo refrigerated flaky biscuits
• Vegetable oil, for frying
Preparation:
1. Prepare Fruit Filling: In a saucepan, combine the dried fruit with water and bring to a boil. Cover, reduce heat, and simmer for 30 minutes or until tender. Let cool slightly, then mash if pieces are large. Stir in sugar and butter; set aside.
2. Alternatively, for Fresh Fruit: Melt 2 tablespoons of butter in a sauté pan. Add peeled, cored, and chopped fresh fruit, sugar, cinnamon, and 1 teaspoon lemon juice. Cook over medium heat until soft, about 15 minutes. Mash slightly and cool.
3. Assemble Pies: Roll out each biscuit on a lightly floured surface into a 5-inch circle. Place about 1 tablespoon of the fruit mixture on half of each circle. Moisten edges of the dough with water, fold in half, and press edges together firmly with a fork to seal.
4. Fry Pies: In a heavy skillet or deep fryer, heat oil to 370°F. Fry pies until golden brown, turning once. Ensure not to overcrowd the pan.
5. Serve: Drain pies on paper towels before serving.
